Menu

As a personal / private chef, menus can span a very broad range and are customizable. The following menu should not be considered as a limitation as far as what is possible. I can do anything from simple Americana family meals to upscale dining. I have a wide range of work experience, and an interest in many different cuisine styles. If you have any particular requests, I am open to working with you on them.

DINNER entrees

  • Filet mignon with coarse black pepper and a cognac cream sauce served with pomme frites
  • Honey mustard lamb rib chops with rosemary fingerling potatoes
  • Baked pork chops with asiago and sage scalloped potatoes
  • Salmon filet baked in puff pastry with dill yogurt sauce acompanied by crab rissotto and asparagus
  • Stuffed chicken roulades with proscuitto, parmesan and citrus served with almond rice pilaf
  • Duck breast with blackberry sauce, truffle oil mashed potatoes
  • Black sesame crusted pan seared tuna with wasabi ice cream, seasoned sushi rice, radish and cucumber
  • Pan seared Chilean sea bass with wild mushroom grits and fresh spinach
  • Thai basil chicken with rice

PASTA

  • Tortellini with mushroom sauce
  • Penne with smoked salmon and green peas
  • Stuffed calamari with tomato vodka sauce and linguine
  • Crab cannelloni with mornay sauce
  • Grorgonzola cheese sauce macaroni

  • Caprese sandwich with fresh tomato, basil, and buffalo mozzerella with an herb mayo
  • Tuna melt with dill on brioche with tomato, bell pepper and sharp cheddar cheese
  • Bourbon BBQ beef brisket with red onion and fried pickle
  • Burger with aged gruyere, and carmelized onions
  • Roasted turkey with brie and cranberry chutney
  • Blackened salmon with dill havarti and avocado
  • Bagel and lox with red onion, sliced tomatoes and capers

BREAKFAST AND BRUNCH

  • Mushroom, onion, and pancetta quiche
  • Challah french toast with berry creme anglaise and fresh fruit
  • Southwestern omlete with chicken and pico de gallo
  • Shrimp and cheddar grits with roasted red pepper and onion
